Gnocchi Potato Salad Recipe

INGREDIENTS:

  • 3-4 large carrots, chopped
  • 3-4 stalks of celery, chopped
  • 1/2 red onion, chopped
  • 1.5 lbs gluten free gnocchi
  • 1/4 cup olive oil
  • 1-2 tbsp white vinegar
  • 3 tsp dry mustard
  • salt and pepper, to taste

Whisk together oil, vinegar and mustard then add into gnocchi salad mix.
